Job summary

Vineyard, Oude Werf and Stellenbosch Hotels by Petousis in Cape Town/Newlands is hiring seasonal Commis Chefs under the supervision of the Sous Chef and Demi Chef de Partie. You will prepare and serve dishes to meet standards, learn the menu, and adapt to changes to ensure timely mise en place and guest satisfaction.

The role supports various shifts and kitchen areas, with a focus on food safety, FIFO stock rotation, and teamwork with senior kitchen staff.

Qualifications

• Matric or equivalent is required; culinary qualification advantageous.
• Chef apprenticeship or formal culinary training.
• Experience in a busy up-market kitchen preferred.
• Able to use kitchen technology and equipment.

Responsibilities

• Measure, chop, and prep ingredients for service.
• Assist in cooking and plating per recipes and standards.
• Keep workstation clean and compliant with food safety regulations.
• Rotate stock using FIFO to ensure freshness and minimize waste.
• Receive, inspect, and store deliveries; ensure accuracy.
• Follow health and safety regulations for handling and cooking.
• Communicate with senior chefs to ensure smooth service.
