Job summary

HotelJobs is seeking a Senior Sous Chef to join a luxury safari lodge’s culinary team. You will assist the Head and Executive Chefs in daily kitchen operations, lead staff, and ensure exceptional, seasonal dining aligned with the lodge’s standards.

You will oversee menu planning, dietary accommodations, and maintain the highest standards of quality, hygiene, and presentation in a fast-paced, guest-focused environment. Weekend shifts and leadership when needed are expected.

Qualifications

• Recognized culinary qualification (diploma or certificate in Professional Cookery or equivalent).
• Valid food safety and hygiene certification.
• Minimum 4–6 years in professional kitchens, including 2+ years in Senior Sous/Sous Chef roles.
• Experience in lodge/hotel/luxury hospitality environment.
• 5-Star Luxury lodge or fine dining experience advantageous.
• Proven experience supervising and training junior kitchen staff.

Responsibilities

• Assist Head/Executive Chef with daily kitchen operations and handovers.
• Support menu planning, seasonal updates, and guest dietary needs.
• Maintain consistent food quality, portions, plating, and presentation.
• Supervise kitchen staff; train and mentor junior team members.
• Ensure stock control, wastage reporting, and accuracy of records.
• Uphold hygiene, health, and sanitation standards at all times.
• Coordinate with Front of House and departments for seamless guest experience.
• Step into leadership role when Head Chef is absent.
