Sanbona Wildlife Reserve in the Western Cape seeks a Senior Sous Chef to lead culinary excellence in a prestigious hospitality setting. You will oversee high-quality dishes, train and supervise kitchen staff, manage costs, and ensure strict food safety and hygiene standards.

Qualifications

• Minimum 5 years of experience in a culinary leadership role.
• Degree or diploma in Culinary Arts and/or completion of a commercial cookery apprenticeship.
• Excellent English communication, both written and verbal.
• Strong leadership and team management abilities.
• Solid understanding of Food Safety Management systems.

Responsabilités

• Oversee preparation and presentation of high-quality, authentic dishes and ensure adherence to recipes and standards.
• Monitor and guide kitchen staff to ensure food safety and compliance with hygiene and local legislation.
• Develop and implement staff training programs and conduct regular performance reviews.
• Manage kitchen operations, control costs, reduce waste, and support stock management.
• Maintain thorough food safety records and operational documentation.
• Lead by example to promote teamwork, service excellence and a positive work environment.
• Coordinate and roster kitchen staff for smooth service delivery.
• Ensure high standards of cleanliness and equipment maintenance.
