Job summary

Wild Dreams Hospitality is seeking a confident grill cook to own the grill station in a four- to five-star kitchen. You will deliver precise, fast, and high-quality meat cookery across beef, chicken, and fish while upholding HACCP standards.

The role requires a Diploma in Culinary Arts and at least 5 years in a hot-section grill position, in a luxury environment. Live-out and uniform provided, with a 5 days on / 2 days off cycle.

Qualifications

• Diploma in Culinary Arts or similar qualification from a recognised institution.
• Minimum 5 years' experience in a hot section griller role.
• Experience in a four- or five-star environment is essential.
• Strong knowledge of meat cuts, cooking methods, and accurate temperature control.
• Ability to clean, portion, and store meat in line with food safety requirements.
• Solid knowledge of food hygiene, health and safety regulations, and HACCP standards.
• Excellent attention to detail in food quality, presentation, and portion control.
• Ability to work efficiently under pressure during busy service periods.
• Reliable, hardworking and consistent across all service periods.

Responsibilities

• Run the grill station to a consistently high standard across all service periods.
• Apply correct cooking methods for beef, chicken, and fish.
• Clean, portion, and store all meat correctly in line with food safety and HACCP requirements.
• Know and apply differences between all meat cuts in preparation and cooking.
• Prepare vegetable items for the meat station while minimising wastage.
• Check stock daily to ensure items are available and identify prep needs.
• Assist with monthly stock takes.
• Maintain strict hygiene, health and safety, and cleanliness standards at all times.
