Job summary

Kabstrading Co. in Durban is seeking an experienced Sushi Chef to join our onboard culinary team. You will prepare nigiri, maki, and sashimi to high standards, supervise junior chefs, and collaborate on menu development.

The role requires meticulous adherence to food safety, cost control, inventory management, and readiness to participate in onboard events and activities. Previous cruise ship or high-volume kitchen experience is preferred.

Responsibilities

• Prepare and cook sushi dishes including nigiri, maki, and sashimi to established recipes and standards
• Ensure all sushi dishes are prepared and presented to high quality and visual standards
• Train and supervise junior sushi chefs in proper techniques and procedures
• Maintain inventory and order supplies as needed
• Ensure compliance with all food safety and sanitation regulations
• Collaborate with other chefs and kitchen staff to develop new menu items and specials
• Assist with menu planning and cost control measures
• Maintain a clean and organized work station at all times
• Follow company policies and procedures, including uniform and grooming standards
• Participate in onboard events and activities as needed
