Approximately 4 years experience in a senior chef role.
Previous experience as a Sushi Chef or in an Asian restaurant setting.
Solid understanding of various sushi types and rolling techniques.
Own transport and valid drivers license.
Ability to work quickly without compromising accuracy.
Strong leadership and team management skills.
Comfortable working collaboratively in a team environment.
Basic computer skills (Word, Excel, Outlook).
High attention to detail and quality.
Willingness to work evenings, weekends, and public holidays.
Prepare a diverse sushi menu using a variety of fresh ingredients, including raw fish such as salmon, tuna, and unagi.
Cook appetizers, soups, and salads in line with Japanese culinary principles.
Lead kitchen staff in the absence of the Head Chef, ensuring smooth operations.
Collaborate with front-of-house staff to accommodate special requests and dietary requirements.
Train and mentor junior kitchen staff in food preparation, cooking techniques, and plating standards.
Monitor all food preparation and presentation to maintain quality and consistency.
Manage kitchen inventory, ensuring ingredients are properly stored, dated, and maintained.
