Liliuokalani Trust in Honolulu, Hawaii seeks a Head Cook to design nutritionally balanced menus for youth and manage a high-volume kitchen. You will apply nutrition science and ensure compliance with USDA, CACFP, and HACCP standards while mentoring staff and maintaining clean, safe kitchen operations.

The role requires leadership, strong organization, and collaboration with the Food Service Manager to deliver quality meals on schedule.

Qualifications

• Associate degree or vocational school diploma is required.
• 3–4 years of high-volume cooking experience in local/Hawaiian foods.
• Knowledge of health and safety regulations and HACCP familiarity.
• Strong attention to detail and accuracy in all tasks.
• Ability to work in a fast-paced kitchen environment.
• Excellent kitchen administration and teamwork abilities.
• Proficient with Microsoft Office apps.
• TB clearance and a valid driver’s license.

Responsabilités

• Design and implement nutritionally balanced, youth-centered menus meeting USDA guidelines and dietary needs.
• Apply nutrition knowledge and food safety to support healthy youth development.
• Ensure compliance with federal, state, and local food service regulations.
• Provide training and mentorship to kitchen staff on safety and recipes.
• Improve kitchen operations by analyzing data and optimizing procurement and inventory.
• Cover kitchen duties in absence of Food Service Manager and ensure smooth meals.
• Maintain HACCP records and production logs for traceability.
• Supervise meal prep, cooking, and packaging per menus and dietary guidelines.
