Job summary

Fitler Club LLC is seeking a Utility Steward to support kitchen cleaning, storage and prep duties in a fast-paced fine dining setting. Responsibilities include dishwashing, stock rotation, and sanitation, with opportunities to assist chefs and participate in prep tasks.

The role requires standing for long periods, lifting up to 50 lbs, and maintaining high cleanliness standards, in a collaborative team of chefs and culinary staff at our Philadelphia venue.

Qualifications

• Minimum 1 year of experience in fine dining hospitality or casual dining.
• Ability to handle multiple priorities.
• Must be able to stand for long periods, lift 50 lbs.
• Strong written and verbal communication.
• Organizational and time-management skills.
• Good judgment and problem-solving abilities.

Responsibilities

• Operate and maintain cleaning equipment and tools.
• Wash and disinfect kitchen areas, tables, tools, and equipment.
• Receive deliveries, store perishables properly, rotate stock.
• Ensure clean wares are stored in appropriate areas.
• Use detergents and sanitizers in the 3-compartment sink.
• Inspect and re-wash items as needed.
• Rack and spray items to remove residue.
• Sort, wash and re-wash silverware.
• Break down dirty bus tubs.
• Empty and maintain trash cans and dumpster area.
• Clean and mop all areas in assigned outlet.
• Break down cardboard and recyclables.
• Assist with prep assigned by chef (fries, dressings, veg prep).
• Perform other duties as directed by Chef de Cuisine/Sous Chefs.

Overview:

The Utility Steward is responsible for performing various kitchen cleaning and storage and prep duties such as but not limited to dish washing, pot washing, general equipment cleaning, storage and rotation of food and supplies. Responsible for handling all foods, storage and cleaning activities in accordance with sanitary procedures and standards.

Responsibilities:

• Operate and maintain cleaning equipment and tools, including the dish washing machine, hand wash station and pot-scrubbing station
• Wash and disinfect kitchen and store room areas, tables, tools, knives, and equipment
• Receive deliveries, store perishables properly, and rotate stock
• Ensure clean wares are stored in appropriate areas
• Use detergent, rinsing, and sanitizing chemicals in the 3-compartment sink to clean pots and pans
• Inspect, pull, and stack cleaned items, send soiled items back for re-scrubbing and re-washing
• Rack and spray all racked items with hot water to loosen and remove food residue
• Sort, soak, and wash/re-wash silverware
• Breakdown dirty bus tubs
• Empty and maintain trash cans and dumpster area
• Clean and mop all areas in assigned outlet
• Break down cardboard boxes and place them and other recyclables in the recycle bin
• Utilize time wisely and fill time with prep assigned by chef that could include cutting fries, making dressings, minor cutting of vegetables and other introductory prep jobs
• Perform all other duties as directed by Chef de Cuisine/ Sous Chefs

• Ability to handle multiple priorities
• Ability to stand for long period so time, lift 50 lbs., and bend, climb or work in confined spaces
• Possess written and verbal skills for effective communication
• Organizational and time management skills
• Good judgment, problem solving and decision making skills
