Job summary

Fitler Club in Philadelphia is seeking a dedicated Utility Steward to support kitchen cleaning, storage, prep duties, and dishwashing for a fast-paced, fine-dining environment.

You will handle sanitation, stock rotation, and assist chefs as needed; the role requires physical stamina and the ability to work on-site with a friendly, professional team.

Qualifications

• Minimum of 1 year of experience in fine dining hospitality or casual dining.
• Ability to handle multiple priorities.
• Ability to stand long periods, lift 50 lbs, and work in confined spaces.
• Written and verbal communication skills.
• Organizational and time-management skills.
• Good judgment, problem solving and decision making skills.

Responsibilities

• Operate and maintain cleaning equipment and tools, including dish washing machine, hand wash station and pot-scrubbing station.
• Wash and disinfect kitchen and store room areas, tables, tools, knives, and equipment.
• Receive deliveries, store perishables properly, and rotate stock.
• Ensure clean wares are stored in appropriate areas.
• Use detergent, rinsing, and sanitizing chemicals in the 3-compartment sink to clean pots and pans.
• Inspect, pull, and stack cleaned items, send soiled items back for re-scrubbing and re-washing.
• Rack and spray all racked items with hot water to loosen and remove food residue.
• Sort, soak, and wash/re-wash silverware.
• Break down dirty bus tubs.
• Empty and maintain trash cans and dumpster area.
• Clean and mop all areas in assigned outlet.
• Break down cardboard boxes and place them and other recyclables in the recycle bin.
• Utilize time wisely and fill time with prep assigned by chef that could include cutting fries, making dressings, minor cutting of vegetables and other introductory prep jobs.
• Perform all other duties as directed by Chef de Cuisine/ Sous Chefs.

Overview:
The Utility Steward is responsible for performing various kitchen cleaning and storage and prep duties such as but not limited to dish washing, pot washing, general equipment cleaning, storage and rotation of food and supplies.
