JOEY Restaurants in Lancaster, CA, is hiring sushi kitchen staff to craft all sushi items under fast-paced, high‑volume conditions. You will follow recipes, prep lists, and maintain sanitation while coordinating with other stations to deliver world‑class experiences.

The role requires 1–3+ years of culinary work, valid local/state Food Handler and California RBS certifications, and a passion for hospitality. Physical fitness to lift up to 50 lbs is essential.

Responsibilities

• Prep all ingredients and food products to fulfill prep lists, par levels, and recipe standards.
• Utilize various prep and cooking methods to ensure quick, precise creation of menu items.
• Maintain prep and cooking areas in a clean, sanitary, and safe manner.
• Clean, organize, and maintain refrigerators, coolers, ovens, prep and dry storage areas.
• Complete assigned side work and closing duties; stock, clean, and organize line stations.
• Follow all safety instructions for kitchen equipment and cleaning chemicals; report issues.
• Follow food service and handling safety precautions and procedures.

In this role, you will produce all sushi menu items while rolling under the pressure of a demanding and fast-paced environment.

Wage Scale

$25.00 - $30.00 per hour. This position is eligible for tips.

Duties

• Prep all ingredients and food products to fulfill prep lists, par levels, and recipe standards.
• Utilize various prep and cooking methods to ensure the quick, precise creation of our menu itemsin accordance withJOEY recipes. Wash, chop, cut, grill, roast, sauté, fry, etc. Coordinate with other stations as needed.
• Maintainprep and cooking areas ina clean,sanitary,and safe manner.
• Clean, organize, andmaintainrefrigerators, cooler drawers, ovens,prepand dry storage areas, etc.
• Complete assigned side work and closing duties to set your team up for success. Stock, clean, and organize line stations.
• Follow all instructions and guidelines for safe usage of kitchen equipment and cleaning compounds. Report equipment problems and maintenance issues to leadershipimmediately.
• Follow all food service and handling safety precautions and procedures.

Basic Qualifications

• 1-3+ years of culinary experience(If you have high potential but less experience, we still want to meet you!).
• Must have or be able to obtain valid local and/or state Food Handler and California Responsible Beverage Service certifications.
• Possess a passion for hospitality and a proventrack recordof creating world-class hospitality experiences.
• Thrive in adynamic,fast-paced work environment.
• Be able to walk and stand for prolonged periods of time; frequent bending, reaching, and stretching; repetitive manual tasks; and lift and carry up to 50lbs.
