Job summary

Four Seasons Hotels and Resorts in Maui is seeking an experienced cook to prepare sushi and other menu items with attention to quality and safety. You will work in a fast-paced kitchen, starting prep for breakfast, lunch, and dinner, and maintain a clean, organized station in accordance with production standards.

The role requires at least two years of culinary experience, preferred sushi background, and certifications such as Serve Safe and Hawaii Food Handler’s Card.

Qualifications

• Minimum two years culinary or related work experience.
• Previous Sushi experience is preferred.
• Serve Safe Manager Certification or equivalent (within 3 months).
• Hawaii Food Handler’s Card and Tuberculosis clearance are required.

Responsibilities

• Prepare sushi and other food items per guest orders following recipes and quality standards.
• Maintain cleanliness and safety of the work environment.
• Operate and clean kitchen equipment (deep fryer, broiler, stove, steamer, mixer, oven, etc.).
• Rotate perishables, check stock levels, and communicate shortages.

About the role

Prepare sushi food items per guest ordersin accordance withproduction requirements and quality standards whilemaintaininga safe, sanitary work environment.

What you will do

• Prepare food items according to guest orders of consistent quality following recipe cards, as well as production,portion, and presentation standards; complete misenplace and set-up station for breakfast, lunch, and/or dinner service.
• Start food items that are prepared ahead of time, making sure not prepare beyond estimated needs.
• Operate,maintainandproperly cleankitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, andflat topgrill.
• Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage

What you bring

• High School education, cooking school or culinary institute education or equivalent experience.
• Minimum two years culinary or related work experience. Advanced culinary knowledge is expected for this position. Working knowledge is generally learned on-the-job.
• Previous Sushi experience is preferred.
• Serve Safe Manager Certification or equivalent (within 3 months)
• Hawaii Food Handler’s Card
• Tuberculosis Clearance
