Trapper's Sushi Co. in North Bend, WA is seeking a Sushi Chef to prepare sushi rolls, nigiri, sashimi, and specialty dishes with precision and creativity. You will maintain high standards of freshness, presentation, and consistency while upholding a clean, safe, guest-focused environment.

Qualifications

• 1–3 years of professional sushi preparation experience preferred.
• Strong knife skills and knowledge of sushi preparation techniques.
• Washington State Food Handler's Permit required prior to hire.

Responsibilities

• Prepare sushi rolls, nigiri, sashimi, and specialty dishes to spec.
• Store, label, and rotate ingredients using FIFO.
• Keep workstation clean and uphold sanitation and food safety.
• Provide exceptional guest interactions at the sushi bar.
• Collaborate with kitchen and front-of-house for smooth service.
• Monitor inventory and assist prep as needed.
• Lead by example and support staff training.
