Levy at Intuit Dome in Inglewood, CA is seeking a Culinary Sushi Prep Cook to support high-volume sushi production under Culinary Management. Pay rate is $24.00 per hour.

Responsibilities include storing sushi produce, preparing rice and fillings, learning quality checks, and maintaining safety standards. Requires 2+ years of culinary experience with sushi skills and the ability to work fast-paced shifts. Compass Group diversity and inclusion statement included.

Qualifications

Responsibilities

• Store sushi produce according to Sushi Standards and maintain cleanliness.
• Prepare fruits, vegetables and sushi rice for cooking.
• Learn quality checks with Sushi Cook 1.
• Prep fish, scrape fish, roll sushi, mold rice, plate and sauce.
• Fill out temperature logs and monitor temps.
• Operate kitchen and sushi equipment; adjust thermostat controls.
• Inventory product and read menus (BEOs, Restaurant Orders).
• Maintain sushi standards and food handling per policies.
• Understand HACCP and proper cooking temperatures.
• Check and maintain proper temperatures during prep, cooling, holding, serving.
• Store, label, and date all food items.

Reports to Culinary Management for 310 Provisions at Intuit Dome. Directly supervises food-service associates in accordance with policies, procedures and applicable laws. Prepares food in accordance with applicable federal, state and corporate standards, guidelines and regulations with established policies and procedures. Ensures quality food service is provided at all times. Maintains 310 Provisions sushi standards and specifications related to food preparation and food handling on a daily basis, understands measurement requirements.

Essential Duties and Responsibilities:

• Store all sushi produce, clean and store to the 310 Provisions Sushi Standards
• Prepare fruits and vegetables and prepare sushi rice for cooking
• check in product with sushi cook 1 to learn quality check,
• Learn to prep fish, scrape fish, learn to roll sushi, mold rice, help plate and sauce.
• To fill out temperature logs
• Basic knowledge of all kitchen and sushi equipment, including adjusting thermostat controls to regulate temperature of ovens, broilers, grills, steam kettles, rice cookers, and maki machine
• Ability to inventory product, read menus (BEOs, Restaurant Orders)
• Maintains 310 Provisions sushi standards and specifications related to food preparation and food handling on a daily basis, understands measurements requirements
• Knowledge and understanding of food safety and sanitation guidelines including temperature requirements and HACCP (Hazard Analysis and Critical Control Points) while understanding the science in cooking temperatures
• Responsible for checking and maintaining proper temperatures throughout preparation, cooling, holding and serving of food items including adjusting thermostat controls to regulate temperatures
• Stores, labels and dates all food items according to policy.
• Performs other duties as assigned.
