Qualifications

• Experience in sushi preparation and food safety practices.
• Ability to work in a fast-paced environment.
• Must be 18 years of age; 21+ if serving alcohol.

Responsibilities

• Production, ordering and receiving, merchandising, inventory sanitation and safety for the sushi department.
• Daily prep: filleting fish and making sushi to fill cases and orders, maintaining AJ’s quality standards.
• Assist with menu planning and development, exploring new trends and recipes for sushi.
• Ensure compliance with health department and weights/measures requirements.
• Maintain communication with the meat department.
• Keep preparation area clean and organized.
• Operate cash register and handle cash and card payments per policy.
• Other duties as assigned.
