Job summary

PONZU LLC in Costa Mesa, CA is seeking a passionate Sushi Chef to lead our authentic sushi program in a fast-paced, fine dining setting. You will craft visually striking dishes, perfect rice, knife skills, and seafood preparation to meet our highest standards.

You will design seasonal menus, train junior cooks, ensure food safety, manage inventory, and collaborate with the team to deliver exceptional dining experiences for dine-in, events, and catering.

Qualifications

• Extensive experience in Japanese cuisine or fine dining.
• Proven expertise in sushi preparation, including fish filleting and rice cooking.
• Strong knife skills and precision in prep.

Responsibilities

• Prepare a variety of sushi and sashimi using traditional techniques and modern innovations.
• Design and develop sushi menus that balance creativity with seasonal ingredients and customer preferences.
• Maintain impeccable food safety and hygiene standards in all aspects of food handling, storage, and preparation to ensure compliance with health regulations.
• Manage ingredient inventory efficiently, ordering supplies as needed to keep the kitchen stocked with fresh seafood, rice, vegetables, and other essentials.
• Collaborate with kitchen staff to coordinate meal preparation for dine-in service, catering events, and special occasions.
• Demonstrate excellent knife skills for slicing fish and vegetables accurately while minimizing waste.
• Ensure all food is prepared according to recipe specifications and presentation standards.
• Assist in training junior kitchen staff on sushi techniques, food safety practices, and proper handling procedures.
• Contribute to a positive team environment by supporting colleagues and maintaining a clean, organized workspace.
• Stay updated on culinary trends within the food industry to continuously elevate the quality of offerings.
