Responsibilities

• Assist in overseeing kitchen staff, educating and sharing passion for food
• Lead by example, setting the tone for an efficient work pace
• Prioritize tasks in the kitchen to ensure timely and efficient preparation
• Understand sushi station operations thoroughly and accurately forecast restaurant and guest needs
• Comply with applicable State Restaurant Health Codes and Regulations

Requirements

• 2+ years’ experience as a sushi line cook
• Experience with sushi and/or Japanese cuisine in upscale or fine dining restaurants
• Ability to work effectively under pressure in a fast-paced, open kitchen environment
• Experience leading a team
• Expert knife skills

Preferred Qualifications

• Proficiency with cutting and working with whole fish, including sashimi-quality fish
• Knowledge of inventory management and food cost control
• Familiarity with contemporary Japanese cooking methods and ingredients
