Overview

Plan and manage the kitchen staff in procurement, production, preparation, and presentation of all food for the hotel in a safe, sanitary environment that conforms to all standards and regulations, ensuring profitable, high-quality products.

Essential Duties and Responsibilities

  1. Manage daily production, preparation, and presentation of all food for the hotel's restaurant(s) and room service, ensuring quality and consistency in accordance with HEI Franchise standards.
  2. Oversee Human Resources functions in the kitchen, including hiring, scheduling, training, developing, coaching, and conducting performance reviews, to attract and retain motivated staff in a safe work environment.
  3. Maintain sanitation and maintenance of kitchen equipment and related areas to meet or exceed health and safety standards and regulations.
  4. Monitor and control labor and food costs, preparing reports and schedules to meet or exceed budgets while maintaining quality.
  5. Promote and ensure adherence to the Accident Prevention Program to minimize liabilities.
  6. Assist the Executive Chef in creating, costing, and implementing seasonal and special menus.
  7. In the absence of the Executive Chef, assume their responsibilities.
  8. Ensure regular attendance and availability to work as scheduled.
  9. Perform other related duties as assigned.

Qualifications and Skills

Education and Experience

  • Two or more years of post-high school education; culinary education is desirable.
  • Five or more years of experience in a related position.
  • Hotel experience preferred.

Knowledge, Skills, and Abilities

  • Advanced knowledge of food principles and practices, including experience in managing staff and complex food and beverage operations.
  • Knowledge of hotel operations, including marketing, security, safety, personnel management, budgeting, quality assurance, and hospitality law.
  • Leadership skills to motivate and develop staff.
  • Ability to work effectively under time constraints and deadlines.
  • Excellent verbal and written communication skills, adaptable to different audiences.

Compensation

Salary Range: $70,000.00 - $80,000.00 annually
Tipped/Service Charge Eligible? No
Discretionary Performance Bonus Eligible? No
