Overview

We are looking for a leader and someone passionate about the culinary arts to join our Culinary team as a Sous Chef. This individualmust be creative, motivated, and have extensive experience working in a high-volume professional kitchen. Successful candidates for this role will have a proven track record of work with creative menus, responds in a professional and courteous manner to guests and team, and enjoys being a teacher of the culinary arts supporting their team both personally and professionally.

The Sous Chef will assist with planning and execution of the daily production, preparation, and presentation of all food for the hotel in a safe, sanitary work environment which conforms to all standards and regulations and achieves profitable competitive quality products.

Your Role:

  • Plan and direct food preparation in the kitchen.

  • Prioritize food quality and timing.

  • Supervise kitchen staff and manage workflow.

  • Quickly identify and address issues that arise during service.

  • Discipline underperforming staff when necessary.

  • Motivate and incentivize team members to exceed expectations.

  • Handle staff scheduling and professional development plans.

  • Manage administrative tasks and maintain disciplinary documentation.

  • Ensure financial accountability and oversee waste management.

COMPENSATION:

$26-$30 per hour DOE Education and Experience

This is a 24-7, 365 day a year business that will require some work during nights, weekends and holidays. A flexible schedule that can move between shifts and days as needed is required.

Qualifications

  • The Sous Chef would ideally be a college graduate in the culinary arts.
  • Experinced at managing, developing and training line staff and a larger team with professionalism, empathy and accountability.
  • Computer skills related to Word and Excel for producing receipes and standard operating procedures.
  • Consistent, efficient with attention to detail and product quality.
  • Familiar and skilled at food costing.
  • Be familiar with basic and advanced cooking methods.
  • Skamania Lodge is open 24-7, we staff from 5am-11pm, must be able to work within these hours including weekends and holidays as needed.
  • Have 5+ years’ experience as a cook in a high-volume professional kitchen.
  • Must have basic allergy knowledge.
  • Must have full knowledge of correct cooking temperatures of all vegetables and proteins, must be able to provide cutting tools needed to perform job as well as a calibrated food grade thermometer.
  • Must have full knowledge of the state’s health codes as well as the eco sure food safety and health report.
  • Active Food handler’s certification.
  • Requires strong organizational skills.
  • Must be able to work independently.
  • Able to be on your feet for long periods of time.
  • Able to lift at least 50 pounds.
  • At least 21 years of age
  • Have a desire to exceed expectations and goals to take that next step to Exec Sous in the future by continuing to develop in their craft as an individual. Willing to elevate skills and abilitites by continued learning outside of internal training.


Compensation Range

The compensation for this position is $26.00/Hr. - $30.00/Hr. based on qualifications and experience.
