Job summary

White Lodging is seeking a Senior Line Cook for Yacht Club at Hotel Trinity in downtown Austin, TX. You will mentor junior cooks and lead BOH operations in a pre-opening fine dining seafood restaurant, ensuring top-quality seafood preparations and oyster bar service.

Ideal candidates bring hands-on high-volume hotel/ upscale restaurant experience, culinary training, and a Food Handler certification. Marriott Autograph Collection experience is a plus with growth across Austin properties.

Qualifications

• Hands-on experience with commercial kitchen equipment in a high-volume hotel or upscale restaurant kitchen.
• Seafood cookery and oyster bar experience is a strong plus.
• Culinary degree or apprenticeship preferred; not required; we will train the right candidate.
• Ability to stand and work at a fast pace in a high-volume pre-opening kitchen.
• Active unexpired Food Handler’s Certification.
• Prior hotel culinary experience preferred in Marriott Autograph Collection or upscale seafood restaurant in Austin.

Responsibilities

• Mentor entry-level cooks and apprentices while overseeing daily prep and production to pre-opening standards.
• Execute all BOH operations following F&B procedures and health codes.
• Ensure proper food handling, storage, and sanitation per HACCP and brand requirements.
• Help maintain food and labor cost targets for the Yacht Club culinary team.
• Check ingredient freshness and uphold recipe standards, oyster bar specs, and portion records.
• Influence guest feedback through consistent food quality and presentation.
• Foster a respectful, cooperative team culture in a pre-opening kitchen.
