Xanterra Travel Collection operates El Tovar Dining Room at Grand Canyon National Park. We seek an Assistant Restaurant Manager to oversee daily dining room operations, lead a renowned team, and uphold exceptional service in a historic, world-class setting.

The role requires managing lunch and dinner services, implementing training programs, and coordinating with the F&B Trainer to maintain top-tier guest experiences in a premier national park restaurant.

Qualifications

• 2 years salaried management experience in multi-unit dining establishments.
• Experience with and knowledge of all front-of-house positions with the ability to assess service situations during meals.
• Beer, liquor and wine knowledge required.
• Experience managing the financial aspects of a restaurant.
• Ability to train and evaluate staff performance in a full-service restaurant.
• Strong leadership and interpersonal skills.

Responsibilities

• Oversee regular service of the El Tovar dining room and lounge with emphasis on lunch and dinner seating.
• Collaborate with Food & Beverage Trainer to implement a comprehensive training program for servers, bussers, hosts/hostesses, bartenders.
• Counsel with assistant managers on promotions for dining rooms, lounge, and employee cafeteria.
• Supervise monthly inventories and maintain sanitation standards per company, park, and Serve Safe guidelines.
• Ensure VIP reservations management and effective shift meetings; communicate specials to staff.
