Job summary

Eataly is seeking a Senior Manager, Operations – Eataly Caffè to lead field operations, drive guest experiences, and manage financial results across assigned cafés. The role is hands-on, on‑site, and requires coaching, staffing, and cross‑functional partnership to achieve EBITDA targets.

You will spend time on the floor, mentor the Caffè management team, and ensure compliance with brand standards, safety, and service quality while supporting new openings and post‑opening stabilization.

Qualifications

• 7+ years of progressive management in high-volume hospitality.
• At least 3 years multi-unit experience or managing managers.
• Experience leading customer-facing operations with strong hospitality standards.
• Strong financial acumen with understanding of P&L and KPIs.

Responsibilities

• Directs day-to-day operations of assigned Eataly Caffè locations on the floor.
• Ensures opening/closing, cash handling, cleanliness, food safety, and health standards.
• Develops management teams, coaches staff, and creates talent succession plans.
• Owns operational and financial performance including revenue, labor, cost of goods, inventory, and EBITDA.
• Travels to Eataly Caffè and North America locations as needed.
