Job summary

Doughboy Restaurant Group in Alsip, IL seeks a Senior Production Manager to lead daily bread production operations, oversee a team of supervisors and line staff, and ensure high-quality output, safety, and on-time production. Initial focus on the donut division with possible overlap into bread.

You will manage equipment usage, raw materials, and compliance with GMP, HACCP, and GFSI standards, while driving continuous improvement and cost-reduction efforts.

Qualifications

• 5+ years in food production or baking manufacturing with leadership experience.
• Strong knowledge of bread production processes, equipment, and QC standards.
• Experience with GMP, HACCP, OSHA and related safety/compliance regulations.
• Demonstrated leadership and team development skills.
• Ability to analyze data and make operational decisions.
• Excellent organizational, communication, and problem-solving skills.
• Proficiency with production software, ERP systems, and MS Office.
• Fluency in English and Spanish (verbal and written).

Responsibilities

• Supervise, train, and mentor production supervisors and hourly employees in the bread division.
• Ensure production goals, quality standards, and safety protocols are met or exceeded.
• Plan and adjust production schedules to meet orders and minimize downtime.
• Monitor KPIs such as yield, waste, labor efficiency, and throughput; report data daily.
• Collaborate with Maintenance, QA, Sanitation, and Supply Chain for smooth operations.
• Conduct root cause analyses and implement corrective actions.
• Ensure compliance with GMP, HACCP, and GFSI food safety standards.
• Lead continuous improvement, process optimization, and cost-reduction initiatives.
• Manage raw material inventory to minimize waste and ensure consistency.
• Maintain accurate production output, labor, and downtime records.
• Lead safety initiatives and investigate incidents as needed.
