• Manage labor costs by evaluating labor needs against projected sales during the shift.
• Review monthly budget and P&L.
• Promote customer satisfaction to build sales.
• Monitor crew performance and correct procedures to control costs and quality.
• Train crew in new products and in customer courtesy; develop new managers.
• Follow flowcharts and checklists to meet prep and production goals; maintain inventory and security of cash, product and equipment.
