Job summary

Loews Hotels, LLC at Universal Orlando is seeking an experienced hospitality professional to fill the Assistant Director of Food and Beverage role. You will assist the Director in managing multiple outlets, ensuring top-tier service, staffing, training, and adherence to brand standards.

The position emphasizes guest satisfaction, cost control, and seamless operation across outlets, with active floor leadership during peak service times and collaboration with culinary leadership.

Qualifications

• Five to seven years progressive leadership experience in hotel or quality food service.
• Effective management, leadership, organizational and communication skills.
• Experience in high-volume Food and Beverage operations preferred.
• Must be able to work a flexible schedule, nights, weekends and holidays.

Responsibilities

• Maintains outlet staffing levels to ensure optimal performance.
• Represents the Director of Food and Beverage in their absence.
• Ensures adherence to departmental and Loews Hotels guidelines, policies and procedures.
• Oversees labor management and cost control across outlets.
• Personally supervises outlet activities to ensure quality production/delivery of product/service.
• Interacts with guests to ensure satisfaction and dining enjoyment.
• Prepares department storeroom requisitions and manages costs within budgeted guidelines.
• Reviews payroll and controls daily labor costs.
• Communicates with Executive/Sous Chef on reservations and VIPs.
• Coaches and develops departmental personnel per Loews standards.
• Attends hotel meetings and maintains cross-department communications.
• Evaluates guest needs and market trends to adjust offerings.
• Manages floor presence during peak service times.
• Other duties as assigned.
