Job summary

MGM Resorts International is seeking a Restaurant General Manager for Red Plate at The Cosmopolitan in Las Vegas. You will lead daily operations, drive profitability, and partner with culinary and marketing teams to optimize guest experiences while maintaining MGM’s service standards.

Ideal candidates bring significant restaurant leadership experience, including Chinese cuisine, and a track record of managing staff under collective bargaining agreements in premium settings.

Qualifications

• 2+ years of experience managing a Chinese restaurant.
• Experience managing employees under a collective bargaining agreement.
• Ability to partner with casino marketing and guest experience teams to elevate VIP experiences.
• Partner with Far East Marketing to drive guest engagement.
• Experience in high-volume or luxury/fine-dining environments.
• Fluent in Chinese (preferred).

Responsibilities

• Owns and leads daily restaurant operations, labor, scheduling, inventory, guest service standards, and marketing strategies to drive profitability; co-owns the restaurant business plan with the Executive Chef.
• Executes policies, procedures, pricing, training, menus, and company initiatives for staff; drives F&B programs and initiatives.
• Maintains top health, sanitation, and cleanliness standards; ensures staff complete compliance training.
• Manages HR duties: hiring, coaching, recognition, diversity adherence, and policy compliance.
• Interacts with guests to ensure satisfaction and a memorable dining experience; handles guest feedback channels.
• Coordinates with culinary team to ensure seamless kitchen-dining room service and knowledge of menu items and equipment.
