Job summary

The Olde Mecklenburg Brewery (OMB) in Charlotte, NC, is seeking a Prep Cook to join its Culinary Team at the LoSo location. The role requires preparing ingredients, following recipes, and maintaining a clean, efficient station in a high-volume environment.

Qualifications

• Culinary degree or culinary training at a high-volume establishment.
• Knowledge of professional cooking and knife handling.
• Knowledge of safety, sanitation, and food handling procedures.
• Experience using slicer and food processor.
• Ability to communicate effectively with colleagues and managers.
• Ability to transport up to 50 pounds.
• Team player and reliable.

Responsibilities

• Prepare ingredients for daily prep pars.
• Organize & measure ingredients accurately.
• Wash, peel, and chop vegetables, fruits, and herbs.
• Prepare proteins.
• Prepare sauces, dressings, and condiments.
• Label and date prepared items for freshness and rotation.
• Safely use kitchen equipment (knives, slicers, peelers, processors, blenders, mixers).
• Maintain clean, organized workspace.
• Follow recipes and guidelines from culinary management.
• Keep stations stocked and logs/par sheets up to date.
• Follow health department guidelines.
• Assist in catered events and other duties as assigned.
