Job Description: Prep Cook
The Prep Cook is responsible for preparing high-quality food based on hotel standards. They ensure the timely and accurate preparation of food items for the line, pantry, or the main kitchen production area.
Responsibilities
- Ensure the quality of food prepared.
- Prepare food orders according to established recipes and menus.
- Maintain cleanliness of equipment and kitchen.
- Keep the kitchen organized to facilitate high-volume production.
- Handle and store food in a sanitary manner.
- Recognize quality standards in fresh vegetables, fish, dairy, and meats.
- Coordinate with the Chef/Sous Chef for banquet functions and special orders.
- Follow all health regulations regarding food safety and storage standards.
- Understand and follow the formal requisition process.
- Perform other duties as assigned by the supervisor.
- Know the location and operation of all fire extinguishing equipment.
- Practice safe work habits to prevent injuries.
- Use production charts as specified by hotel standards.
- Support other kitchen positions as needed.
- Operate and maintain cleanliness of kitchen equipment.
- Maintain a 'Clean As You Go' policy.
- Assist in storage and rotation of food items according to hotel procedures.
- Sign keys out and back in under supervision as needed.
Qualifications
- High School diploma or equivalent; hotel or related experience preferred.
- Culinary experience required.
- Flexibility to work long hours as needed.
- Ability to exert up to 50 pounds of force occasionally and 20 pounds frequently.
- Ability to stand during entire shift.
- Ability to withstand temperature variations.
- Thorough knowledge of menus and preparation standards.
- Proficiency in techniques such as charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking.
- Knowledge of herbs and spices and their proper use.
