Job Description: Prep Cook

The Prep Cook is responsible for preparing high-quality food based on hotel standards. They ensure the timely and accurate preparation of food items for the line, pantry, or the main kitchen production area.

Responsibilities
  1. Ensure the quality of food prepared.
  2. Prepare food orders according to established recipes and menus.
  3. Maintain cleanliness of equipment and kitchen.
  4. Keep the kitchen organized to facilitate high-volume production.
  5. Handle and store food in a sanitary manner.
  6. Recognize quality standards in fresh vegetables, fish, dairy, and meats.
  7. Coordinate with the Chef/Sous Chef for banquet functions and special orders.
  8. Follow all health regulations regarding food safety and storage standards.
  9. Understand and follow the formal requisition process.
  10. Perform other duties as assigned by the supervisor.
  11. Know the location and operation of all fire extinguishing equipment.
  12. Practice safe work habits to prevent injuries.
  13. Use production charts as specified by hotel standards.
  14. Support other kitchen positions as needed.
  15. Operate and maintain cleanliness of kitchen equipment.
  16. Maintain a 'Clean As You Go' policy.
  17. Assist in storage and rotation of food items according to hotel procedures.
  18. Sign keys out and back in under supervision as needed.
Qualifications
  • High School diploma or equivalent; hotel or related experience preferred.
  • Culinary experience required.
  • Flexibility to work long hours as needed.
  • Ability to exert up to 50 pounds of force occasionally and 20 pounds frequently.
  • Ability to stand during entire shift.
  • Ability to withstand temperature variations.
  • Thorough knowledge of menus and preparation standards.
  • Proficiency in techniques such as charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking.
  • Knowledge of herbs and spices and their proper use.
