Job summary

Halperns' Steak & Seafood in Grand Prairie, TX is seeking a Meat & Seafood Cutting Specialist (Cutter). The role focuses on precision portioning, master trimming, and presenting premium meat and seafood to the highest culinary standards.

You will read and execute detailed customer instructions, inspect product quality, maintain yield logs, and safely use specialty knives and tools to ensure accurate portions. Monday–Friday schedule; pay range $18–$22 per hour, based on experience.

• Experience with commercial production equipment.
• Proven ability to portion accurately and efficiently.
• Focus on maximizing yield and reducing processing costs through precise cutting.
• Strong problem-solving for yield optimization and substitutions.
• Ability to excel in a fast-paced, high-volume production environment.
• Team player with a safety-first mindset.
• Clear verbal and written English communication.
• Knowledge of Meat Buyer’s Guide specifications as they apply to internal specs and customer requirements.

Responsibilities

• Coordinate daily production schedules and workflow with supervisors and production managers.
• Hand-craft, trims, slices, and portions subprimals to exact customer specifications.
• Inspect all incoming and outgoing product for quality and compliance.
• Read and execute detailed customer instructions with precision.
• Maintain yield logs and track product weight and content.
• Operate knives and production tools safely to trim and portion.
• Ensure proper sealing, tagging, and tracking of products and byproducts.
