Job summary

Maman is looking for a passionate Pastry Chef to join the Charlotte team at our commissary location. You will lead the pastry department, work closely with the Savory Chef and Pastry Director, and be responsible for production planning and team management.

You will oversee quality, cost controls, and ensure the highest standards while maintaining a respectful and collaborative work environment. Weekend and event coverage is required, with growth opportunities within maman.

Qualifications

• Minimum 1–2 years of leadership experience.
• ServSafe certified.
• Able to perform all tasks required for production of baked goods.
• Excellent communication and teamwork.
• Knowledge in French and American baked goods including fermentation, lamination, dough, quick bread, cakes and fillings.

Responsibilities

• Lead Pastry department in the Charlotte commissary kitchen.
• Collaborate with Savory Chef and Pastry Director.
• Organize production of menu and catering/events orders.
• Hire, train, document, grow and schedule your team.
• Supply freshly baked goods to multiple locations daily.
• Manage cost, stock, orders, and par levels; ensure quality and consistency.
• Lead and communicate with regional leaders and GMs as needed.
