Location

The Watergate Hotel is centrally located in Washington, D.C., a city of political power, prestige, and elegance, rich in culture with theaters, museums, architectural splendors, and unforgettable national memorials. The hotel is within walking distance of the best the city has to offer.

Strategic Intent

The pastry cook is responsible for preparing, baking, decorating, finishing, and issuing various types of pastries, breads, cakes, chocolates, confections, ice creams, and plated desserts. They must ensure that preparation and service are of the highest quality and completed in a timely manner. All duties must comply with federal, state, local laws, regulations, and ordinances, as well as department and company policies, including health, sanitation, and safety standards.

General Duties and Responsibilities
  • Maintain and strictly abide by sanitation and health regulations and hotel requirements.
  • Communicate effectively with management and co-workers regarding kitchen operations.
  • Follow recipes precisely, including conversions, and understand mise en place.
  • Prepare all baked goods, including proofing, baking, and finishing.
  • Prepare ice creams, confections, chocolates, and plated desserts.
  • Apply basic knife skills required for preparation.
  • Assist in decorating cakes and pastries.
  • Conduct daily inventory to determine production needs.
  • Restock all kitchen supplies and food items required for service.
  • Ensure all requisitions are processed properly and stored in designated areas.
  • Identify and safely operate all kitchen equipment.
  • Properly label and date all products for safekeeping and sanitation.
  • Use proper food handling techniques following health and safety standards.
  • Maintain a clean and organized work area.
  • Assist chefs and co-workers as needed in preparation and production.
Experience and Requirements

Minimum two years of experience as a Pastry Cook in a luxury hotel or fine dining restaurant. Education: High school diploma; culinary certification.
