Qualifications

  • Experience leading a pastry team in a luxury hotel, Michelin‑recognized, or fine dining restaurant.
  • Exceptional technical pastry skills with expertise in plated desserts, breads, viennoiserie, chocolate work, frozen desserts, and classic pastry techniques.
  • A passion for precision and executing recipes to the highest standard while embracing continuous improvement.
  • Strong leadership, organizational, and communication skills.
  • Collaborative mindset with a genuine desire to mentor and develop others.
  • Ability to thrive in a fast‑paced, service‑driven environment while maintaining attention to detail.

Responsibilities

  • Oversee all aspects of the pastry operation, including production, execution, plating, and quality assurance.
  • Execute the established pastry program with exceptional consistency and attention to detail.
  • Inspire, coach, and develop the pastry team and foster a collaborative kitchen culture.
  • Partner with the Executive Chef to introduce seasonal desserts that celebrate Hawaii’s ingredients while preserving the Spago brand integrity.
  • Manage ordering, inventory, food cost, labor efficiency, and production schedules.
  • Maintain the highest standards of cleanliness, food safety, and sanitation.
  • Deliver desserts that complete the guest dining experience with creativity, elegance, and consistency.

What You'll Do
