Qualifications

Responsibilities

• Supervise evening/overnight stewards and pot washers for sanitation and storage.
• Ensure compliance with safety rules and health department guidelines.
• Inspect cleanliness of banquets, dock, and storage areas.
• Oversee sanitation of kitchen, store rooms, hallways, and equipment.
• Operate dishwashing equipment and manage proper storage of china, glass, and silver.
• Report equipment shortages or faults to management.
• Follow procedures for breakdown, cleaning, and reassembly of kitchen equipment.
