Le Parfait Paris — Commissary Bakery, San Diego is seeking an experienced Overnight Bakery & Pastry Production Manager to lead a small overnight team in bread, pastry, and dessert production. Qualifications

• Professional bread-baking and fine pastry experience.
• Practical skills in chocolate work, pastry creams, decorating, and dessert assembly.
• Previous experience supervising a bakery, pastry, or food production team.
• Experience managing inventory and coordinating production.
• Ability to supervise delivery drivers and ensure accurate, timely dispatch.
• Strong organization, communication, and problem-solving skills.
• Ability to stay calm under pressure, prioritize tasks, and meet deadlines.
• Availability for full-time overnight work, including weekends and holidays.
• Ability to perform the essential duties of a commercial bakery role, with reasonable accommodation as needed.

Responsibilities

• Lead the overnight team, assign tasks, and organize production to meet daily deadlines.
• Prepare and bake breads and execute pastry production according to established recipes and standards.
• Apply fine pastry skills, including chocolate work, pastry creams, decorating, and dessert assembly.
• Check product quality, consistency, presentation, and freshness throughout the shift.
• Oversee packers to ensure store orders are complete, accurate, properly labeled, and ready for dispatch.
• Supervise delivery drivers, coordinate loading and departure times, and communicate delivery instructions.
• Perform a final check before each truck leaves: verify every store’s order against its order list, confirm nothing is missing, and ensure products look good, are properly packed, and are securely loaded. Resolve any issues before departure.
• Promptly notify the affected stores of any overnight issues that could impact their operations, including product shortages, substitutions, quality concerns, or delivery delays. Clearly communicate what is affected, the corrective action, and the expected resolution time so stores can prepare before opening.
• Monitor ingredients, packaging, and finished products; maintain accurate inventory, follow FIFO procedures, and communicate shortages.
• Control waste and use ingredients efficiently.
• Train, coach, and hold team members accountable for quality, productivity, and teamwork.
• Maintain food safety, sanitation, and an organized workspace.
• Communicate production issues, staffing concerns, delivery problems, and shift updates to management.
