Job summary

Eataly Houston is seeking an Overnight Bakery Lead to run the 24-hour bakery for our new store opening. You will produce bread, focaccia and other items to our authentic Italian recipes while overseeing overnight production and a small team.

You will supervise daily bakery operations, train staff, manage inventory and waste, and interact with guests to share our bread production story. A high school diploma and bakery experience are required.

Qualifications

• 2+ years of experience in a baker preparation position and mastery of related techniques.
• Ability to work independently with minimum guidance.
• Basic math and measuring skills.
• Excellent work ethic, communication and time management skills.
• Post-secondary culinary program highly preferred.

Responsibilities

• Supervise daily bakery and pizza alla pala counters operations.
• Prepare pizza, bread, focaccia, rolls and other bread items for restaurants and retail.
• Follow proper proofing and baking techniques for each bread variety.
• Master all shifts and production processes in the bakery, including overnight production.
• Guide trainees and externs through training procedures.
