Job summary

Qualifications

• 10+ years of professional Sushi Chef experience.
• Professional experience preparing and serving Omakase.
• Ability to independently handle full sushi preparation process from fish prep to guest service.
• Strong knowledge of food hygiene and sanitation practices.
• Strong teamwork and communication skills.
• Reliable, responsible and committed to high standards of quality.

Responsibilities

• Prepare and plate sushi and other dishes served as part of the Omakase course.
• Prepare and serve sushi directly to guests at the sushi counter.
• Handle the full fish preparation process, including processing, cutting, and proper storage.
• Prepare, cook, season, and maintain sushi rice at the appropriate temperature.
• Adjust dishes and service according to guest preferences and the progression of the Omakase course.
• Monitor food quality and inventory levels.
• Maintain a clean and sanitary kitchen and work environment.
• Follow all applicable food sanitation and safety requirements.
• Collaborate closely with other kitchen staff on food preparation and daily kitchen operations.
• Perform other duties related to sushi preparation and kitchen operations as needed.
