Job summary

Marcus Hotels & Resorts is seeking a Corporate Executive Chef to lead culinary operations across restaurants, banquets, and catering. The role requires travel to properties and a hands-on, strategic leader with a strong track record in high-volume, upscale hotel cuisine.

The ideal candidate combines culinary creativity with financial acumen and a people-first leadership style, driving guest satisfaction, innovation, and profitability across a multi-unit platform based in Milwaukee.

Qualifications

• Minimum 10 years’ prior experience as Executive Chef or similar with demonstrated success in all areas of culinary operations.

Responsibilities

• Ensure consistency of food quality and presentation according to menu specifications and SOPs.
• Create standard operating procedures for culinary operations across the division.
• Collaborate with corporate and property F&B teams to develop innovative menus to boost sales and profit.
• Lead local culinary teams to update menus based on market changes and seasonality.
• Provide budgeting guidelines and improve cost structures by optimizing staffing and processes.
• Establish procurement guidelines to meet quality and profit standards.
• Develop and lead company-wide health and sanitation standards.
• Visit locations to inspect kitchen operations, as needed.
• Source and train culinary staff, and plan succession for culinary talent pipeline.
• Develop deployment teams for field task forces and future acquisitions.
• Act as a working Chef in the field when needed in emergencies.
• Manage vendor relationships with VP of Procurement.
