Job summary

The iconic Arizona Biltmore, part of Pyramid Global Hospitality, seeks an experienced Cook II to join its culinary team. You will prepare, cook, and plate items across stations, ensuring quality and consistency for a luxury dining operation.

The role requires at least two years of cooking in a fast-paced kitchen, ability to work days/nights/weekends, and adherence to health and safety standards. Maricopa County Food Handler Card and ServSafe preferred.

• Full-time; must work days, nights, weekends, holidays.
• Cook on grill and sauté for ~150 covers per shift.

What you will have an opportunity to do:

McArthur's is named after the resort's architectural inspirations serving New American cuisine with hints of the Sonoran Desert delivering a creative fusion of meticulously sourced ingredients brought from farm to table in a menu of comforting delight. The Cook II will be responsible for maintaining and setting up food production and quality control of all meat, fish, poultry, sauces, stocks, seasoning and all other food items prepared in the different kitchen stations.

ESSENTIAL FUNCTIONS

• Prepare all food items according to standard recipes and/or as specified on guest check to ensure consistency of product to the guest.
• Visually inspect, select and use only food items ideal cooking, in preparation of all menu items.
• Maintain consistency and work as a team.
• Check and control the proper storage of product, monitoring age and condition of all food items to rotate and maintain highest quality.
• Keep all refrigeration equipment, storage and working areas clean and clutter free, complying with Health department regulations.
• Prepare daily requisitions for supplies and food items for production.
• Read and employ math skills to follow recipes.
• This is a full-time position, and you must have availability to work days, nights, weekends, and holidays.
• Ability to work grill and Sautee with average of 150 covers per shift.

What are we looking for?

• High School Diploma or equivalent
• Graduate of an Apprenticeship or accredited Culinary School, preferred
• At least two (2) years of cooking experience in a professional, fast-paced kitchen
• Prior hotel / resort experience, preferred Upscale / luxury dining experience, preferred
• Maricopa County Food Handler Card
• ServSafe Food Handler Certification, preferred
