Job Overview

To ensure proper service from the front line through quality control, training of line cooks, and maintaining sanitation standards.

Responsibilities
  • Check all items against recipe cards and verify use records for all served items, ensuring quality and presentation.
  • Monitor line setup before meal functions for maximum efficiency.
  • Maintain equipment and enforce the "clean as you go" policy.
  • Prepare food following recipes, production, and portion standards, and ensure proper food handling and storage.
  • Manage food prep timing to meet demand without excess.
  • Rotate perishables and ensure proper temperatures.
  • Monitor stock levels, identify shortages, and assist in food cost management.
Qualifications

Education/Formal Training: High school diploma or equivalent.

Experience: Minimum 2 years in a related role.

Knowledge/Skills: Knowledge of cooking practices and kitchen procedures, ability to perform analytical tasks.

Physical Demands

This role involves lifting up to 70 lbs, periodic climbing, bending, full mobility, standing for extended periods, and working in varied temperatures (-10°F in freezer, over 100°F on the line). Must be able to hear timers and communicate effectively, understand instructions, and follow safety protocols.
