• Assist with planning, organizing, controlling, and supervising food production functions.
• Check use records at the beginning of each meal period to ensure estimates match actual production, and record any necessary adjustments, including leftovers.
• Coordinate all food production needs across all areas of responsibility.
• Ensure the production of consistently high-quality food.
• Maintain and evaluate existing concepts and develop creative new food ideas to ensure quality and profitability.
• Supervise production closely to prevent waste of food and labor, and loss of quality.
• Conduct daily inventory of all fresh foods.
• Issue recipe cards and use records at individual kitchen workstations to verify inventories and production estimates.
• Prepare written estimates for all food production needs.
• Schedule food production by area to optimize food and labor utilization.
• Supervise the preparation of orders for future food supplies.
