Scratch Restaurants Group is seeking a Head Sushi Chef for its Shokunin concept in Austin. You will lead the sushi program, oversee weekly Toyosu shipments, and set the daily selection while running service in a tight, high-quality environment.

Qualifications

Experienced sushi chef with fine dining training or equivalent experience.
Strong knife skills and attention to detail.
Some kitchen leadership experience and mentorship focus.
Fast, precise and able to maintain quality under pressure.

Responsibilities

Handle butchery, prep, and plating for all appetizers, nigiri, sashimi, and hand rolls.
Manage sourcing and quality control on Toyosu Market shipments and vendor relationships.
Build, train and lead a small sushi team.
Set and rotate the daily fish selection and specials.
Maintain cost control and waste without compromising quality.
