Maki & Ramen in Washington, DC is seeking an experienced Sushi Chef to lead the launch and shape the new site. The role focuses on high-quality sushi and fast, precise service, with hands-on leadership and mentorship of junior team members.

You will perform advanced knife work, fish butchery, rice preparation, and ensure food safety standards while maintaining clean, well-organized sections and providing exceptional guest experiences. Competitive hourly pay and tips accompany the role.

Competenze

• Proven experience as Sushi Chef in a high-quality, high-volume Japanese restaurant.
• Excellent knife skills including filleting and portioning.
• Strong knowledge of Japanese ingredients and sushi rice preparation.
• Understanding of raw fish handling and HACCP/food safety standards.
• Ability to work calmly and efficiently under pressure while maintaining presentation.
