Job summary

Fairmont New Orleans’s Delmonico Steakhouse is seeking a Captain Server to lead service with polish, hospitality, and guest-centric attention in a luxury, high-volume setting.

You will mentor Servers, coordinate timing with Front of House and Culinary teams, uphold Delmonico standards, and ensure seamless experiences for VIPs and regular guests while maintaining composure and team morale throughout service.

Qualifications

• Minimum three years of Server experience in an upscale, fine-dining, luxury hotel, or high-volume restaurant environment preferred.
• Previous experience in a lead server, captain, senior server, or similar leadership position strongly preferred.
• Luxury hotel, fine-dining, or premium steakhouse experience preferred.

Responsibilities

• Lead by example in delivering warm, polished, professional, and personalized service consistent with Delmonico Steakhouse and Fairmont New Orleans standards.
• Serve as a floor-level leader and resource for Servers, Server Assistants, Food Runners, and other Front of House colleagues.
• Support the Restaurant Management team in maintaining service standards, operational efficiency, and exceptional guest experiences.
• Oversee assigned dining areas or service sections and ensure all steps of service are executed consistently and accurately.
• Assist in coordinating the timing and flow of service between the Front of House and Culinary teams.
• Maintain strong communication with the Chef, Sous Chefs, Managers, Servers, and support staff throughout service.
