Job description

The Dead Rabbit Group is currently seeking a Lead Line Cook to work with our Chef De Cuisine and Sous Chef at our location in Austin, Texas.

The Lead Line Cook is tasked with supervising and directing a team of line cooks to ensure the kitchen operates smoothly and efficiently. They are responsible for managing food preparation, cooking, and plating of dishes, while adhering to the highest standards of quality and cleanliness. The Lead Line Cook collaborates closely with the Sous Chef and CDC to guarantee all dishes are prepared accurately, safely, and in a timely manner.


LEAD LINE COOK ROLE RESPONSIBILITIES INCLUDE:

  • Shares and embodies our core values and love of Ireland and Irish Pubs, acting as a standard bearer in the company.
  • Maintains a positive, optimistic, and professional attitude and demeanor at all times throughout service.
  • Maintains accountability for themselves as well as the team, is open to both giving and receiving feedback in a professional manner.
  • Oversees and leads the day-to-day service periods, including working on the line when necessary,
  • Open availability for AM and PM shifts.
  • Maintains Department of Health ('DOH') compliance by conducting daily walk-throughs of all BOH spaces, identifying and addressing DOH violations immediately.
  • Ensures optimal inventory management and storage to evaluate prep levels and ensure we are not over or under prepared for each shift.
  • Evaluates BOH performance management, and cultural management, ensuring all team members consistently execute our standards.
  • Coaches and guides all BOH team members by offering constructive feedback and recognition to instill and maintain a high-performance culture focused on operational excellence, ensuring team members are set up for success in executing their roles and primed for upward mobility when such positions become available.
  • Effectively communicates BOH standard operating procedures, expectations, and operational concerns, issues, or updates, ensuring all BOH team members are aligned, perform accordingly, and promptly respond to any team member queries or problems.
  • Ensures all team members practice safe work habits, identify and resolve potential safety hazards and, if/when accidents occur, investigate, document, and resolve accordingly.
  • Ensures all team members execute products according to stipulated recipes, quantities and procedures, maintaining the highest possible quality.

ROLE REQUIREMENTS INCLUDE:

  • Candidates must have previous experience as a line cook in a high-volume upscale setting
  • Candidates must possess excellent interpersonal skills, including with team members and customers, as the role involves a lot of interaction with both internal and external stakeholders.
  • Candidates must have a culinary degree/certificate or equivalent.
  • Candidates must have a ServSafe food handlers certificate or local equivalent.
  • Candidates must be hungry to learn and grow.
  • Candidates must have the requisite schedule availability.
