Job summary

PACS Group is seeking a Dietary Director in California to lead the dietary department of a long-term care facility. You will oversee meal planning, ensure safety and nutrition, and manage staff, budgets, and regulatory compliance.

The role includes coordinating with nursing and activities teams, conducting assessments, and maintaining accurate resident records. Strong leadership and knowledge of state/federal regulations are required.

Qualifications

• Education and/or Experience: Graduate of an approved dietary manager’s course meeting state and federal regulations.
• Minimum one year of experience in a long-term care dietary department preferred

Responsibilities

• Direct and participate in safe, appetizing meal preparation and service.
• Maintain food quality, portions, and compliance with menus and physician orders
• Manage department budget, control costs, and order food and supplies
• Plan and assist with special meals for holidays and events
• Hire, train, supervise, and evaluate dietary staff; handle disciplinary actions
• Ensure proper food storage and handling per regulations
• Process new diet orders and updates; maintain diet cards and charts
• Assess resident preferences, allergies, and risks; complete monthly notes
• Prepare staff schedules and ensure coverage
• Maintain clean, safe kitchen and storage areas
• Inspect dietary department for safety and cleanliness
• Coordinate dietary with nursing and activities
• Participate in QA and IDT meetings
• Present in-service education for staff
• Investigate injuries and retraining
• Ensure ongoing compliance with regulations
• Maintain confidentiality of resident information
• Visit residents for nutrition assessments and diet explanations
• Notify Dietitian of menu changes and document accordingly
