Job summary

Colonial Downs Group LLC in Richmond, VA is seeking an experienced Playbook Cook I to advance food preparation and support kitchen leadership, including training and coaching BOH team members. You will ensure recipes and standards are followed across the restaurant, bar, and special functions.

The role requires a high school diploma or GED, 3–5 years of culinary experience, SERV Safe certification, a valid racing license, and a clean driving record.

Qualifications

• High school diploma or GED required.
• Three to five years of related culinary experience.
• SERV Safe Certification required.
• Valid racing license required.
• Current driver’s license with at least three years driving history.
• Experience leading or mentoring BOH staff preferred.

Responsibilities

• Lead and train BOH team members to culinary standards.
• Guide BOH during food preparation and service.
• Onboard new team members and reinforce safety.
• Forecast and coordinate prep based on menu items and headcounts.
• Ensure compliance with recipes and HACCP guidelines.
• Maintain knowledge of kitchen equipment operations and sanitation.
• Monitor quality and temperature of prepared foods.
• Collaborate with kitchen leadership to resolve issues.
