The Lodge Casino in Black Hawk, CO, operated by Jacobs Entertainment, Inc. (JEI), is hiring a Cook III–White Buffalo. This full‑time, hourly position requires at least 3 years of high‑volume cooking experience and a strong command of advanced culinary techniques.

Qualifications

• High School Diploma, GED, or equivalent required.
• At least 3 years cooking in a high-volume setting.
• Advanced culinary experience is required.
• Strong technical and organizational skills.
• Leadership readiness; supervisory experience preferred.
• Flexible availability including nights, weekends, and holidays.
• Food Safety Handler Certification required.
• Identity and right-to-work documentation in the United States.

Responsibilities

• Manage all aspects of assigned station including prep, service, and closing.
• Ensure station readiness prior to service.
• Maintain adequate supplies to ensure seamless service.
• Execute complex cooking techniques (emulsions, reductions, braises, finishing).
• Adjust methods based on ingredient quality and production needs.
• Manage pacing and timing of orders.
• Communicate clearly with kitchen team and ticketing system.
• Support smooth workflow during peak periods.
• Train and coach junior cooks.
• Build prep lists and demonstrate proper techniques.
• Provide constructive feedback to improve performance.
• Monitor trim, spoilage, and overproduction.
• Identify trends and report issues to leadership.
