Job summary

Pyramid Global Hospitality's Pullman Miami Airport property is seeking a Lead Cook with a strong background in high-volume kitchens and a culinary degree. You will lead a hands-on culinary team, create and cost menus, and drive quality in a fast-paced hotel environment.

We seek a creative, motivated leader who can mentor staff, manage budgets, and ensure safe, sanitary operations. This role requires long hours, weekend work, and a passion for delivering outstanding guest experiences.

Qualifications

• 3+ years of experience as a cook in a high-volume kitchen
• Active Food handler’s certification
• Ability to work long hours including weekends and holidays
• Knowledge of food allergens
• Understanding of health codes and food safety standards
• Ability to lift 50 pounds
• Must be at least 21 years old
• Strong organizational skills
• Ability to work independently

Responsibilities

• Assist executive chef in daily production planning, preparation and presentation of all hotel food
• Lead kitchen team, mentor staff and ensure professional conduct
• Conduct daily kitchen walk-throughs and address cleanliness/maintenance issues
• Attend F&B, BEO and leadership meetings and represent culinary team
• Manage departmental finances, costs and budgeting for profitable operation
• Update prep sheets daily and ensure allergen protocols are followed
