Job description

As a member of our hospitality team, the primary responsibility of a Lead Cook is to supervise the kitchen staff in the absence of the Chef and ensure the maintenance of food quality. This role will create positive leadership by providing guidance and training to the Kitchen associates in proper preparation techniques, equipment usage, and safety measures. The Lead Cook will visually inspect and select the freshest ingredients for menu items, follow recipes, and prepare requisitions for supplies. A crucial part of this role is monitoring production flow, adhering to cost and quality control procedures, maintaining menu specifications and recipes, updating production forecasts, and ensuring compliance with health regulations regarding receiving, storage, and rotation of foods.

Key Responsibilities include:

  • Train and supervise kitchen staff in proper preparation, equipment handling, and safety measures; evaluate performance and provide guidance to maintain high-quality output.
  • Conduct sensory evaluations (taste, smell, visual inspection) of all products and mise en place before service to ensure top quality and correct recipes.
  • Report substandard or low-quality products promptly to supervisors or chefs for immediate action.
  • Ensure accurate timing and pacing during service to deliver timely and appropriate food to guests.
  • Follow the culinary staff schedule; implement modifications under the direction of culinary supervisors and chefs.
  • Monitor production flow, making adjustments to adhere to cost and quality standards.
  • Oversee proper receiving, storage (including temperature control), and rotation of food products, ensuring compliance with health regulations, proper labeling, dating, and storage practices.
  • Conduct daily taste panels to verify dishes are seasoned correctly and ready for service.
  • Assign specific duties to kitchen employees to ensure efficient operations and service quality.
  • Maintain and update menu specifications, recipes, and production forecasts; ensure all kitchen equipment is clean, maintained, and promptly repaired when needed.
  • Foster positive relationships within the team and across departments, promoting teamwork and collaboration.
  • Handle and store equipment properly; keep the work area clean following the 'clean as you go' policy, using sanitizers on all food contact surfaces.
  • Ensure proper setup of workstations before meal functions to maximize efficiency during service.
