Job summary

Four Seasons Resort Lana’i is seeking a Cook II who shares a passion for excellence and who infuses enthusiasm into every task. The Cook II prepares menu items to guest specifications while supporting daily kitchen operations in a fast-paced environment, ensuring quality and consistency across stations.

You will manage mise en place, assist Cook I, monitor equipment and temperatures, and help control costs by reducing waste.

Qualifications

• Legal work authorization in the United States.
• Hawaii TB clearance required by Hawaii DOH.
• Hawaii Food Handler’s Card and ServSafe certification required.
• Ability to stand for extended periods, lift up to 70 lbs, and push/pull as needed.
• Proficient knife skills and ability to multi-task.

Responsibilities

• Prepare food items to guest specifications while maintaining quality and consistency.
• Complete mise en place and set up workstation for service.
• Independently manage assigned kitchen station and support Cook I.
• Prepare items in advance aligning with forecasted needs.
• Operate and clean kitchen equipment (fryers, broilers, stoves, ovens, grills, mixers, slicers, etc.).
• Date, label, rotate and store food per food safety policies.
• Monitor par levels and prep and freezer pulls.
• Communicate shortages to leadership.
• Assist in controlling food costs and waste reduction.
• Support inventory accuracy and corrective actions.
