Description
Direct and participate in food preparation and service, ensuring that food is safe, appetizing, and meets the quality and quantity needs of each resident according to physicians' orders and approved menus. Maintain cost control and work towards meeting budget guidelines. Plan and assist in preparing and serving holiday and special meals and functions.
Supervise all dietary functions and personnel, including hiring, orientation, training, disciplining, and, when appropriate, terminating dietary staff. Ensure proper storage of food and supplies, complying with current state and federal guidelines. Process new diet orders and changes from nursing staff, updating diet cards accordingly.
Maintain sufficient staffing levels to provide dietary services, assess residents' food preferences and allergies, prepare staff schedules, and handle schedule adjustments. Keep the kitchen and food storage areas safe, orderly, clean, and sanitary. Transmit orders for food and supplies and document menu changes, notifying the Dietician as needed.
Participate in QA and IDT meetings as assigned. Check trays for accuracy before delivery and regularly inspect the Dietary Department for safety and sanitation. Plan and deliver in-service education programs for dietary staff. Investigate on-the-job injuries, implement corrective actions, and retrain staff as necessary.
Ensure ongoing compliance with all federal, state, and local regulations, maintain the security of the Dietary Department, and coordinate dietary services with nursing and activities departments. Conduct monthly nutritional notes for residents at nutritional risk, visit residents for nutritional assessments, explain diets, record preferences, and promote quality food service.

Physical Demands and Work Environment
Requires standing, walking, reaching, pushing/pulling frequently, lifting up to 50 pounds, and occasional climbing or stooping. Vision requirements include close, distance, color, peripheral, and depth perception. The environment is typically low to moderate noise, with accommodations available for disabilities.
